Three days among the palenques
We left Oaxaca before sunrise and arrived at a small palenque in Santiago Matatlán just as the roasting pit was uncovered. The smell — sweet agave and wood smoke — will stay with me.
Don Anselmo poured three different mezcals from the same agave, varying only in the fermentation. The difference was extraordinary. Bring cash for bottles; they don’t take cards.
