Pairing at a glance
The pairing logic
Fatty beef with a pungent sauce loves structure: tannin cuts richness while the pepper echoes in the glass.

Cut — Tannin or acidity that slices through fat and richness. Echo — One shared flavour or ingredient links the plate and the glass. Cleanse — Bubbles, acidity or cold that refresh the palate between bites. Regional — What grows together goes together: same place, same table. Learn more →
HOW TO MAKE IT
Ingredients · serves 2
Method · prep 10 min · cook 20 min
- 1
Season the steaks well and sear in a very hot pan 3–4 minutes a side for medium-rare, adding butter at the end.
- 2
Rest the steaks on a plate for 8 minutes.
- 3
In the same pan, soften the shallot, add peppercorns, deglaze with brandy and reduce.
- 4
Add stock and cream, simmer until glossy and spoon over the steaks.
Cook’s tipRest the meat. A squeeze of lemon on a side salad resets the palate.
