Structure
THE STORY
Yquem is made from grapes shrivelled by the beneficial fungus Botrytis cinerea, picked berry by berry in several passes. The result is liquid gold: honeyed yet fresh.
Apricot, honey, saffron, orange peel and vanilla.
Lusciously sweet yet vibrant; candied fruit, spice and razor acidity.
Extremely long, honeyed and fresh.
At the table
Foie gras, Roquefort, tarte tatin and fresh peaches.
How it is made
Hand-picked in successive passes, fermented and aged in new oak barrels for around thirty months.
Terroir & region
Autumn mists from the Ciron river encourage noble rot on gravel and clay soils.
A single vine at Yquem may produce just one glass of wine. In years when the noble rot does not arrive, the estate simply makes no Yquem at all.
